Food Prep – you don’t need refrigeration here in the Philippines, the heat in the air keeps the food at serving temperature.

For lunch I had some had some Papaitan Soup (Bile Soup) with goat intestines and liver, and on the right is Sinigang soup (sour and savory with tamarind) with goat feet. Probably the best thing I ate on this trip so far
